Tasty Recipe Hummus

Hummus is an authentic dish from middle east. Let's see how to prepare this ‘Chickpeas, Sesame and olive oil’ dish. But let's start with ‘Tahini’, Sesame seeds and olive oil paste.

Background

                      Hummus is an authentic dish from middle east. This dish is like a soul of their daily intake. This is main dip used in their daily food. This dish travelled the whole world through the migrants and invaders from middle east. But it became one of the most loved dishes in the world. Today we will see how to prepare this ‘Chickpeas and olive oil’ dish. Before making the final dish, let’s preparation ‘Tahini’, a Sesame seeds and olive oil paste.

                      1) Main ingredients –

                      Sesame seeds, olive oil, Soaked and boiled Chickpeas (soaked in the water level above 4 inches of the beans layer, for about 8 to 10 hours or for an overnight) (Boil it until, we can easily crush it to paste by our finger), two to three garlic cloves, salt as per taste, Lemon Juice (if lemons are small then take the juice of 3 to 4 lemons, otherwise 1 is enough), 1 table spoon Cummin seed powder, a glass of chilled water (it should be really child ice water)         

                      2) Ingredients for Garnishing –

  • Keep 5 to 10 soaked and boiled Chickpeas aside for decoration.
  • Red Chilli powder of about a quarter table spoon,
  • Few Pomegranate beans, 5 to 10 per bowl.
  • Coriander leaves
  • Some Cummin Seed Powder (mentioned above)

                      3) Recipe –

Take Sesame seeds about 100grams in a pan and give it heat until it turns Golden brown or light toast. Pour it in a plate let it Cool down, so that we can grind it well. Take Mixy grinder, put that Golder brown Sesame seeds in it and dry grind it just to break it in little pieces. Remember do not grind it until it become powder. Keep stirring in between it by pausing the mixy and then again grind it until it breaks in fine pieces. Now put about 4 to 5 table spoons of Olive Oil in it and grind it again for about 30 to 40 seconds. Repeat the process until the mixture becomes a smooth and it should smoothly flow from the jar into the bowl. Make sure the paste is not too thick or not fluid/liquid, it should be medium and can easily flow in the bowl. Because extra olive oil can ruin the taste and thick paste can ruin the entire dish. Out Tahini is ready

                     4) Let’s start making our ‘Tasty Recipe Hummus’. 

  • ow take the soaked and boiled Chickpeas in mixy grinder, put the half of the Tahini we made, in it.
  • Add Garlic cloves as per your taste, 1 is recommended but not more than 3 pieces. Otherwise, it will spoil the smell and taste as well.
  • mix salt as per taste.
  • Pour Lemon juice as mentioned in ingredients.
  • Add all cummin seed powder.
  • mix 10% of a glass of chilled water.
  • Add Olive Oil of about two to three table spoons.
  • Grind all these ingredients. Mix it in between, so that each Chickpeas will be crushed to paste.
  • Make sure the ‘dip’ shouldn’t be thin and runny. We want a thick paste unlike Tahini.
  • Keep swirling until everything becomes paste.
  • Now at this stage add about 2% of chilled water again. Chilled water is required to make creamy and fluffy paste and it will cool down the temperature of the entire dip and the life of it will also increase.
  • Grind it again till you see fine paste. Stop the mixy now.

                     5) Garnishing –

The dish is ready, but garnishing is left. Let’s arrange it in most yummy way so that one should not wait to smell, grab and eat it.

  • Take out the thick paste in a medium size bowl.
  • Take spoon, dip it in the Olive oil well and touch and gently press it over the top of the thick paste in the bowl. This should be in round shape in the bowl. This will create round space in the paste. Make sure the dip does not spill over the bowl.
  • Put a tablespoon of Olive oil in that round shape.
  • Gently put to 3 soaked and boiled Chickpeas over the top of our ‘Hummus’, as per your choice.
  • Slowly put few (2 to 3) Pomegranate anywhere on the top of ‘Hummus’ dip.
  • Sprinkle some Red Chili Powder. Recommended, but not mandatory. It is as per your taste preference.
  • Sprinkle some Cummin seed Powder. Recommended, but not mandatory. It is as per your taste preference.
  • On the center or side, put a small Coriander leaf.

You can garnish all the bowls as per above guideline or as per your wish. You may add some other garnishing ingredients as well, like a Basel leaf instead of Coriander leaf etc.

Place each bow in separate plate and serve it. Enjoy ‘Tasty Recipe Hummus’ and Happy Cooking.
